Rainbow Cupcakes

In preparation for my twin nephew's birthday, I decided to try out a new recipe that I'm going to use for their party cupcakes. I think these rainbow cupcakes are PERFECT for kids or for the kids at heart! They are so colorful and fun for a birthday party. I'm going to decorate them with baseballs, basketballs and footballs. Look for that post coming up this weekend. I've got a pretty busy week ahead with 6 dozen cupcakes going out this week!








On another note: A big congratulations goes out to Kyle! He passed the 2nd part of his CPA exam! Whoo-hoo! 2 parts down and 2 parts to go! Keep up the good work!

CALLING ALL COLLEGE SPORTS FANS!!!

My latest cupcake venture has taken me into the world of collegiate cupcakes! I am a sucker for pretty much ANYTHING with my favorite team's logo printed on it. So, tah-dah, why not cupcakes! If you are a fan of college sports, this cupcake is for you! What better way to support your team than with a delicious cupcake topped with your team's logo made out of edible fondant! You don't want to throw a football party or host a tailgate without these! If you don't see your favorite team, just ask me! I'm going to be adding additional teams this week.






Let's not forget all of our kiddos playing middle school, high school, pee-wee sports either. Cupcakes with their team's name would be a hit as well! Bring these cupcakes to the game and you will definitely be the MVP!



New Cupcake Idea

I love chocolate and I love peanut butter. Also, I love the idea of having a "center filling" in my cupcakes. On Friday, I made chocolate cupcakes with a peanut butter filling....mmmmmmm! They were quite tasty! I topped them with pure vanilla buttercream frosting. For all of you chocolate lovers out there, this one is for you!

Stethoscope Cupcakes

A friend of mine called this morning and needed a dozen cupcakes to take to a physician's office for a doctor. I was happy to help her out! I wanted to do something a little bit special for her, so I decided to decorate the cupcakes with stethoscopes. I thought they turned out cute!

Back to School Cupcakes

For the past 2 days, I've been working on back to school cupcakes for my sisters and some friends. Their children took them to their teachers on the 1st day of school! I think that is a great way to start the year off on the right foot...bribe the teacher!
I used a jumbo cupcake pan and let me tell you....jumbo cupcakes are JUMBO! They are definitely two cupcakes in one. I did almond cupcakes with vanilla buttercream icing. I also made a red apple out of fondant and iced "ABC" on the apple. They turned out really cute! I boxed them up and put a label on the top with my contact info, so hopefully I'll get a few more orders. Thank you Debbie, Michelle, Emily and Kelly!
I finally decided on a name (drum roll, please)....

My 1st Cake!

I began my cake decorating class last night, so I was eager to put my skills to the test. The class taught us how to level a cake, fill it and ice it with buttercream. I was overly excited and want to try to decorate a cake with fondant. I have never used fondant and this was my 1st experience working with it. I love the way fondant looks, but not crazy about the way it tastes! I guess it just depends on whether you want a really yummy tasting cake or a cake with great
decorations and creativity.
I've got a lot to learn about using fondant, but must say that the 1st one isn't too shabby! Let me know if you need a cake for any occasion!



This is an almond-flavored white cake with cherry filling and vanilla buttercream icing.

Coca-Cola Cupcakes

As you can see, I've been busy making cupcakes! :) On the menu, today, were Coca-Cola Cupcakes. My sister makes this yummy cake and I was determined to make it into cupcakes. Yes--it actually has Coca-Cola in the batter and icing (well...I used Coke Zero). It is one of the best chocolate (cup)cakes that I have ever tasted! They were a little "involved" in the preparation, but well worth it! The icing has a ganache texture and thickens up when cooled. The recipe makes at least 2 dozen (I even threw out a little bit of batter & icing). Enjoy!

New Cupcake Recipe!

On Friday, I tried a brand new cupcake recipe!
Lemon Cupcakes with a Fresh Strawberry Center!
If I must say so myself, they were mighty tasty AND they were pretty easy to make. I'm sure it helped that I finally got a KitchenAid MIXER! YEA!! Finally. I haven't been so excited about something in a long time! She is so beautiful. I've got to clear some counter space to make room for her. I need to think of a name....Molly (the mixer)?
These cupcakes have fresh lemon juice and lemon zest, fresh butter and creamy buttermilk. I put a bright red strawberry right in the middle. It makes the cake extra good! The icing is a fresh lemon buttercream with a hint of vanilla! Mmmmm... I took the cupcakes to the lake house for the weekend and they were gobbled up in no time!
